Who Invented Soul Bread?

Soul Bread was created, developed and taste-tested by real low carbers Souls Song (Gloria Koch), Joan Syndmiller and Pat Gunder in the Facebook group: LCHF-The Road to Success.

A few look-alike recipes have popped up, but low carbers sadly report those make eggy, dense loaves – nothing like the texture of Soul Bread!


Creating a Perfect Low Carb Bread

Souls Song (Gloria Koch) describes the recipe creation:

“I found when using cream cheese as a base, the protein powder works just fine as a flour replacement.

Pat Gunder searched locally, finding a perfect whey protein isolate to try. She tested the bread in a lower altitude, created a decent loaf of her own and threw out a few ideas to make it lighter.

With a bit more experimentation, I incorporated the baking soda idea, added cream of tarter, and after doing even more research I ended up with the best loaf of low carb bread I have ever tried.

The original Soul Bread recipe worked so well, all three of us (Joan, Pat and I) started using our imaginations, creating new flavor varieties.”

“I made these three today: Pumpkin Pecan, Cheddar Bacon Onion and Cinnamon Pecan. The pumpkin one is the family favorite.

I think I’ll make individual breakfast soufflés with the cheesy one by adding some spinach, artichokes, Asiago and sun-dried tomato pieces.”

What’s the best (tested and proven) brand of unflavored protein isolate?

Isopure, Hoosier Hill Farm, Advanced Gold Standard, Georgia’s Protein for Balance and Canadian Protein. The most important thing is finding an isolate type of protein powder – not the concentrate type.


Can I use other types of protein powders to make Soul Bread?

Any powder you use will change the texture and taste of course, but egg white protein and pea protein powders have been tested and used successfully.


What does xanthan gum do for Soul Bread?

Xanthan gum replaces gluten in flour, giving Soul Bread a more bread-like texture.


Will other gums work besides xanthan gum?

Yes! You may substitute guar gum or glucomannan powder instead.


Is there a substitute for using eggs in the recipe?

Yes! Adding 1/4 cup more olive oil, another 2 tablespoons heavy whipping cream and 1 more teaspoon of xanthan gum works as an egg substitute.


Is there a substitute for using olive oil in the recipe?

Yes! Use 1/4 to 1/3 cup of melted coconut oil or avocado oil in place of the olive oil.


What if my bread feels dry?

Add 2 more tablespoons of olive oil to the recipe and be sure not to over-bake.


What can I do to achieve a tall rise?

Over-stirring the bread batter after adding the protein powder will prevent maximum rise, resulting in a heavier texture. Check your protein powder to make sure it’s isolate. The concentrate types will not rise to your expectations.


How do I store Soul Bread?

Soul Bread stays fresh a few days on the counter, or up to a week in the fridge. You may also wrap individual slices separately and freeze. Soul Bread thaws very well.
